A Tasty Semester End

So today was the last day of the semester. I easily aced the one final I had and all is well. Final grades are due in about a week. But yesterday I decided I wanted to try a Peanut Butter Chocolate Cheesecake recipe I found through Pinterest. Now I had NEVER made a real cheesecake before and just prayed it turned out. What I didn’t know is that I should have wrapped the springform pan so that the water bath water didn’t get into the bottom. My cookie crust was soggy. I also think I whipped the filling too much because I had fluffy cheesecake not dense, and the other cardinal sin is that it didn’t sit overnight. But it was good. REALLY good. I took it to the very last cooking class to share because I have stuck my nose in that class quite a few times and I wanted to thank them and also what fun is learning to cook if I can’t share?

My cheesecake looked amazing. It didn’t hold all that well but it was nice. Very rich though, Chef Ian and a couple others had to have a glass of milk to cut the sweetness. I went by the recipe and it wasn’t mine but I wrote down to use more cheese and egg and less sugar next time. Sadly i have no pics of my cake whole but I can share with you a piece that I got a picture of before it was attacked by hungry family-

So now that I sit here late at night it feels good not having to worry about any classes. I mean I have some things related to the club that are going to happen over the summer but no classes. And this semester was so nice without having to take math. I’m going to have to take it in the fall and the spring though sadly. I am also taking cooking classes in both semesters. But all the time I will have has to be devoted to the club. We need to raise money. We need to get the club where it can pay for all kinds of travel for students like me to learn abroad. We need to think about selling shirts, jackets, knife kits, toques, decorating tips, non perishable items. Bake sale for sure in the fall it garners thousands. My hope for next semester is that our advisor chef Ian sticks around to see the club rebound from nothing into something. I know I have the networking skills to get all kinds of donations of product that will help us earn more. I also hope that we don’t lose the cooking portion of the program either because I’m not interested in running a hotel, I want to cook!

So I am happy to report my blogging will be picking up, maybe some more reviews and giveaways, more posts, more pictures. Happy SUMMER to me!!

    First, congrats on acing that final :)
    Second, you’re not helping my diet here, not one little bit, with the scrumptious cheesecake photo – I’m trying that recipe next special occasion, for sure!
    But I’m curious, what’s the purpose & method with the water bath? I’ve never used a water bath when making a cheesecake – do you use it to cool the cake after baking, or set the springform pan in water while it’s in the oven, or what?

    Thats a great question! The water bath is to distribute the heat all around the cake instead of from below only via the oven coils (or gas outlets if you use gas). You put the springform pan in the water bath whilst cooking, but make sure you use foil so the water can’t get in, thats what happened to mine. Its okay though I am not a professional chef just yet! I’m allowed to make mistakes :)
