This month’s challenge was to use Nutella! I personally LOVE Nutella and because I love bananas with it I knew my dessert would have both. It took me a couple weeks to finally decide to make Banana Whoopie Pies with Nutella Frosting. I am still salivating sitting here typing this because they were heavenly! they are pretty much a very very soft cookie with frosting in the middle. Divine I tell you!
Ingredients:
Cookies (Adapted from Martha Stewart’s recipe)
- 2.5 C. Flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 Mashed Banana (ripe!)
- 1/2 Plain Yogurt
- 1 stick unsalted butter, softened
- 1/2 C. granulated sugar
- 1/2 C. packed lt. brown sugar
- 1 large egg
- 1 tsp. Vanilla, the purer the better
Frosting:
- 1 C. Nutella
- 1 stick unsalted butter, softened
- 1 C. Powered sugar
- 2 tbs milk or cream
Instructions: Preheat to 350. Prep two pans with parchment paper or silicone sheet. Don’t use a pan sprayed with pam it will spread and ruin the cookies!
1. Sift flour, baking powder, baking soda and salt into a bowl. Set Aside.
2. Combine the mashed bananas and yogurt in another bowl.
3. Beat butter and sugars in your stand mixer on medium speed until it is creamy and pale, 3 minutes or so. Don’t forget to scrape the sides of the bowl if you are using a stand mixer, then add the vanilla and egg and mix until they are incorporated.
4. Start adding half your banana mixture and half of your flour mixture, alternating until its all added to the mixer.
5. Drop by rounded teaspoonful, it will be a soft mixture but that is ok, place them 6 or 9 to a pan, overcrowding will lead to then cooking unevenly.
6. Bake until the edges are golden, about 13 minutes. Slide your parchment with cookie or liner onto the cooling rack and let cool.
Frosting Instructions:
1. Cream together the butter and the star of the show, the 1 cup of delicious heaven on Earth, Nutella.. in your mixer.
2. Incorporate the powdered sugar gradually until combined
3. Mix on high speed and add the milk until frosting is smooth.
4. Get any kind of decorative tip you have (I used a star tip it wasn’t a big one) and a pastry bag and squeeze some of that delicious frosting on the cookie, then add another cookie on top and there you have it!
