Corn Stack

When I was a kid, the school had crappy tasting food for lunches but once a month they would serve what they called Corn Stack. It was the only day of the month that every student I knew would have hot lunch. Its basically chili on corn chips with lettuce and cheese. (tomatoes optional). Its so easy to make and so yummy to eat. I had made this recently and it was so good, and a friend on Facebook had asked me if I made my own chili for the stack and I couldn’t remember because I didn’t write it down. This time I wrote it and now I am sharing this with you. Its not going to taste like taco’s, its the chili.

What You Need:

1 lb. hamburger

2 big cans chili beans (I used Brooks brand mild chili beans)

1/4 C. Ketchup

1/4 C. Sugar (I like it sweet, you can omit this if you want)

Corn Chips

Lettuce, shredded

Shredded Cheese

Tomatoes (optional)

How to make it:

1. Brown your hamburger and warm your beans.When the burger is done, add it to the chili.

2. Add in the ketchup and sugar. You could add chili powder if you want more flavor of chili. simmer for about 7 minutes to meld the flavors.

3. Chop your lettuce (and tomatoes if you want)

4. Stack in this order: First the chips, then the meat, then the lettuce, and finally the cheese on top.

This recipe is absolutely PERFECT for leftover chili. Quick and easy! I think your meat and chili is a matter of taste, if you like spicy you can go for it but one thing I liked about Corn Stack as a kid is that the chili was very slightly sweeter than regular chili. My kids love it though, and I have been known to have 2nd or 3rds myself. I love it!
