Just because summer is over doesn’t mean you can’t enjoy a nice and light salad! Caprese salad has been around for a very long time, and its so easy there is no need for a formal recipes! And look how nice it photographs, I was pretty surprised when I pulled this image off my memory card! All you need is:
Tomatoes (organic heirloom taste the best!)
FRESH mozzarella
Fresh Basil
Cracked Pepper and Sea Salt
Olive Oil
Slice your tomatoes and cheese to about 1/4 inch and then just alternate them on the plate, using basil leaves in between, then drizzle with olive oil, and give it a grinding of salt and pepper, that’s all there is too it. This can be done with cherry tomatoes and square mozz as well there are so many variations but the tastes are the same and its a nice light salad. You can even go further and add some heat with some red pepper flakes if you like it. The best Caprese I’ve had was from Fabulous Catering in Minneapolis MN this past summer, the olive oil was infused with jalapeno!









I don’t particularly care for tomatoes but I love Caprese salad!

Caprese salad is my favorite Italian salad. Simple, yet so tasty. I love making this as a warm panini. Warm is just as good as cold. Yum!

This is my favorite salad! I love adding balsamic reduction to it as well. And I recently had it as a panini and it was amazing!
