Patriotic Checkerboard Cake Take 2

As another 4th of July comes around, I decided I wanted another crack at a patriotic checkerboard cake. My first cake was made a couple years back. It isn’t horrible but I have learned a lot about baking since then, and I ice cakes a little better too.

Here is the cake from 2012:

And just like last time, I made the cake with the Wilton Checkerboard Cake Pan Set. I also used the Wilton gel colors in Christmas Red and Royal Blue. I didn’t want to run out of cake so I made 3 box cakes and a double batch of vanilla buttercream (1/2 butter 1/2 crisco) And needless to say I had lots of leftover cake and icing! I made cupcakes and a one layer marble cake!

Checkerboard cake:

Here is the one layer of cake I made with the leftover batters, I swirled the inside but I didn’t cut it because we gave it to our elderly neighbor who is the best neighbor EVER.

And then here are the little cupcakes I made, which I am making again on the 4th of July!

I hope all of my American friends and family have a safe holiday weekend, and God Bless America!
