The Crock Pot Chicken That Made My Teenager Sing

I happened to buy an organic chicken last week and thawed it this week for use and found a great recipe for it, Whole Chicken in a Crock Pot, found on my fellow food blogger friend Julie’s site, The Little Kitchen.. her site is a bevy of delicious recipes that I love to gaze over often!

I followed her recipe but didn’t have celery and also didn’t have Thyme. I had everything else though and I think the real secret to juicy is in the rub and use of lemons inside! I do think the use of an organic chicken made it better too, I could be wrong but I think it was more juicy in the breast meat and had a better flavor. Either way I loved it.

Doesn’t that look good? Well it WAS. it was so good that on the first bite my son SANG, and he is 14 so you can imagine what it would take for that. Then my husband and daughter tried it and all three of them begged me to make the Thanksgiving turkey to taste just like it because they loved it so much!

I made a simple gravy from the drippings, I strained the carrots and onions etc out and used the juice in 2 TBS of butter and 1/4 cup flour. I did not add salt to the gravy but I did add some white pepper and it was perfect, so much so that my teenager wanted to drink it.

Go to Julie’s site and print out her recipe, you will thank me later.

Thanks for pointing out this recipe, I often wondered if I could cook a whole chicken in my crock pot but never got around to it. I will be making this, this week.

About organic vs conventional chicken – I have made the same recipe many times with organic chicken but now that we are scraping the bottom of the barrel with our budget I have had to buy conventional chicken and after a few times I realized the chicken itself is just not as good :(
